Organic coffee is subject to strict guidelines, unlike conventional coffee. The EU organic seal ensures gentle cultivation, harvesting, and processing. The standards for organic coffee cultivation are as follows:
- Organic coffee is grown in mixed cultures and not in strict monocultures. These plantations grow not only coffee plants but also other plants. These “shade trees” protect the coffee plants from the sun and ensure better soil quality.
- Organic coffee is harvested by hand. In conventional coffee cultivation, coffee cherries are removed with harvesting machines, without regard to their ripeness. This compromises the quality of the coffee. Organic cultivation completely avoids industrial harvesting methods.
- Organic coffee, unlike conventional coffee, is roasted slowly and gently.
- In organic coffee, the use of pesticides and artificial fertilizers is completely avoided.
Organic coffee has been proven to be of better quality than conventional coffee. Since the harvest is done by hand, only the really ripe coffee cherries are picked. Even overripe cherries that are already fermenting do not end up in the harvest. During mechanical harvesting, sorting is done, but the machines do not manage to remove all unfavorable coffee beans.
