DescriptionThe product is manufactured by a traditional family business in the Swiss Emmental. Naturata cereal coffee has been produced there from the very beginning.
Special featuresDue to the special manufacturing process, the instant coffee is gluten-free. For the infusion varieties, the raw materials are partially malted, roasted, coarsely ground, and mixed. For instant beverages, on the other hand, the following processing steps occur after the aforementioned: The roasted and crushed ingredients are brewed, creating a strong coffee extract. The powder, including the adhesive proteins prolamin and glutelin (which together form gluten), responsible for intolerance, are not water-soluble and remain in the filter. Thus, the cereal coffee is already gluten-free. The next processing step is the instantization of the still liquid extract, meaning it is transformed into a fine powder by spray drying, which is then filled. To ensure that no gluten or gluten residues are contained in the instant products, we regularly conduct analyses - the gluten content is always below the detection limit.
ProductionDuring malting, barley and rye are soaked and allowed to germinate. The subsequent roasting stops the germination process. The enzymatic processes initiated during germination are important for the development of roasting aromas, which can now optimally develop due to the slowly rising temperature. They form the basis for the full, aromatic taste of the cereal coffee. To ensure that each ingredient in the finished product can optimally unfold its flavor, the ingredients are roasted individually. Roasting temperatures vary between 150° and 200°C. Finding the optimal roasting time before the raw materials might burn is the result of years of experience of the roaster. The coarsely crushed, roasted components are mixed according to recipe specifications. This is followed by extraction: The ingredients are very gently permeated with hot water in a counter-current process, which creates the coffee extract. This raw mass, with a dry matter content of 25%, is sprayed as a fine mist from the top of a several-meter-high spray tower. The droplets fall through a stream of hot air, which removes their liquid content. What arrives at the bottom is already the dry instant powder. This spray drying gives the coffee its fine crema. No additives are used.
