The best biodynamic ingredients are the basis for Naturata Grain Coffee. Due to the special manufacturing process, the instant coffee is gluten-free. First, the individual ingredients are partially malted, roasted, coarsely ground, and mixed. Then, the roasted and crushed ingredients are brewed, creating a strong coffee extract. The powder, including the glutinous proteins prolamins and glutelins (which together form gluten) responsible for intolerance, are not water-soluble and remain in the filter. Thus, the grain coffee is already gluten-free. In the next processing step, the still liquid extract is instantized, meaning it is converted into fine powder form by spray drying, which is then filled. To ensure that no gluten or gluten residues are contained in the instant products, Naturata regularly conducts analyses - the gluten content is always below the detection limit.
Naturata Grain Coffee has been lovingly produced since its inception in a small Swiss family business with a long history. Before roasting, the chicory roots, acorns, and figs are chopped and dried; grain is malted for 1-3 days. During malting, the grain, rye, and barley, is soaked and allowed to germinate. Afterwards, all components are gently roasted individually. The roaster's experience plays a crucial role here: it must not be roasted for too long or too short. Thus, each individual ingredient is roasted for the necessary duration to achieve a harmonious composition at the end. Then, the roasted material is coarsely ground, and extraction takes place: the ingredients are very gently flowed through with hot water in a counter-current process. A grain coffee is virtually prepared, which is then thickened. The resulting brown coffee concentrate with a dry matter content of 25% is sprayed as a fine mist in tall spray towers. The droplets fall through a hot air stream, which removes their liquid content. What arrives at the bottom is already the dry instant powder. This time-consuming production and spray drying at the end of manufacturing are also the reason for the fine crema that the grain coffee obtains when poured, similar to freshly brewed bean coffee. No additives are used.
You can enjoy Naturata Grain Coffee not only as a hot drink or iced coffee. It also adds a refined touch to desserts and numerous other dishes.
