Apples need five months on the tree, plenty of sunshine, and careful tending before they are ready for juice production. The obtained apple must is first fermented into apple wine and then undergoes a further fermentation to mature into naturally cloudy apple cider vinegar. After a final filtration, the vinegar obtains its clear, characteristic color.
Like all Byodo vinegars, it is absolutely natural and neither heated nor sulphured. This preserves valuable enzymes and flavors in a delicious way. The presence of cloudiness, deposits at the bottom of the bottle, and possibly flocculation does not signal a loss of quality, but rather illustrates the natural production method of this organic product. Any "mother of vinegar" that may appear can be easily sieved off, and the vinegar can continue to be used as usual.

Byodo organic vinegar is primarily produced from alcohol, which means, depending on the variety, from red wine, raspberry wine, grain alcohol, etc. The alcohol is poured into large fermentation tanks and gradually fermented into vinegar at temperatures of approximately 25 °C using acetic acid bacteria and oxygen supply. Experts refer to this process as a continuous procedure. Byodo organic vinegar is not heated, so that important enzymes and flavorings are preserved. All ingredients are 100% organically grown.
