Byodo's organic white wine vinegar has a harmoniously intense taste and a nearly clear color. Fine Austrian or Italian table wine is slowly fermented into vinegar at pleasantly warm temperatures. This process is called continuous vinegar fermentation. Before bottling, the natural organic vinegar is only filtered. With its intense taste, it pairs wonderfully with robust salads, but is also excellent for preparing Mediterranean dishes and pickling vegetables.

The taste differences between white wine vinegar and apple cider vinegar result from their respective acidity and characteristic aroma. Due to the higher alcohol content in white wine, fermentation into white wine vinegar creates a more intense acidity compared to apple cider vinegar. The subtle grape note helps to round off the taste of the vinegar.

Our high-quality Byodo vinegars are naturally unsulphured, as organic vinegars are not allowed to be treated with sulfur. Turbidity, deposits on the bottom of the bottle, and possibly flocculation are by no means signs of quality loss, but rather characteristic of the natural production method of this organic product. Any "mother of vinegar" can be easily strained off, and the vinegar can be used without hesitation.

Information on production:

Byodo's environmentally friendly vinegar is fundamentally produced from alcohol, meaning, depending on the variety, from red wine, raspberry wine, grain alcohol, etc. The alcohol is filled into large fermentation tanks and, with the use of acetic acid bacteria and oxygen supply, fermented into vinegar at temperatures of approximately 25 °C. Experts refer to this process as a continuous procedure. Byodo's organic vinegar is deliberately not heated to preserve valuable enzymes and flavors. After production, Byodo's organic white wine vinegar undergoes only filtration, which preserves its appealing clear color. All raw materials are 100% organically grown.
