Made from organically grown rye for home baking, not preserved
For a loaf of bread weighing approx. 1.3 kg with Hensel® Natural Sourdough, you will need:
375 g finely ground rye wholemeal, 375 g finely ground wheat wholemeal, 1 cube of yeast or Hensel Dry Baking Yeast, 400 to 500 ml lukewarm water, 1 teaspoon sugar, 1 sachet Hensel® Natural Sourdough (150 g), shake well, possibly warm gently in a water bath (40°), 1 to 2 teaspoons whole sea salt, spices such as caraway, coriander, fennel, anise, onion powder, depending on taste.
Always bake bread with lukewarm ingredients and in rooms that are not too cold or drafty. In addition to spices, Hensel® soy grits, onions, linseed, sesame, etc. can also be incorporated.
Place wholemeal flour in a large bowl, make a well in the center.
Mix yeast with approx. 3 to 5 tablespoons lukewarm water and sugar in a cup to form a paste and pour into the flour well.
Cover with a cloth and let rise in a warm place (possibly an open oven at 50 °C) for approx. 15 minutes until the yeast forms bubbles. Then add the remaining water, Hensel® Natural Sourdough, whole sea salt and, depending on taste, the other spices, and knead the dough very thoroughly for approx. 5 to 10 minutes (possibly using a mixer with dough hooks).
Cover the dough again with a cloth and let rise for approx. 20 to 30 minutes. Knead again and either shape the dough into a loaf or place it in a greased loaf pan.
In a warm place, it should rise for approx. 30 minutes until its volume has doubled. Then lightly score with a sharp knife and brush with lukewarm water.
Bake in a preheated oven at approx. 200 to 220° (gas oven level 3 to 4) for approx. 60 minutes.
It is recommended to place a fireproof dish filled with water inside.
