Fine extracts of fresh organic herbs give the delicious organic vinegar the intense herbal note that makes it absolutely indispensable for raw food & salads, such as potato salad. The base for this is distilled alcohol, which is slowly fermented into vinegar and seasoned with our special herb combination to achieve a balanced mild flavor.
The aromatic secret of our herb vinegar lies in the precise blend of finely spiced herbal extracts and naturally fermented spirit vinegar.
Cloudiness, as well as deposits at the bottom of the bottle and possible flocculation do not affect the quality; rather, they emphasize the natural manufacturing process of this organic product. Any "mother of vinegar" can be easily strained off, and the vinegar can be used as usual.

Information on production:

Byodo's environmentally friendly vinegar is always made from alcohol, which means, depending on the variety, from red wine, raspberry wine, grain alcohol, etc. The alcohol is filled into large fermentation tanks and gradually fermented into vinegar using acetic acid bacteria and oxygen supply at temperatures of approximately 25 °C. Experts refer to this process as a continuous procedure. Byodo organic vinegar does not undergo a heating process to preserve valuable enzymes and aromas. After production, only a filtration of Byodo's organic herbal vinegar takes place, which maintains its clear and appealing color. All raw materials come 100% from organic farming.
