Byodo Organic Penne Semolina - a classic among pastas!

The term "Penne," which comes from Italian and means "quills," refers to a type of pasta with an angled cut and straight ridges, which is particularly beneficial for sauce absorption.

Our Penne is produced using traditional methods with 100% organic durum wheat semolina from Italy. The result is a perfect "al dente" bite, thanks to the use of bronze dies during production.

The inspiration for this pasta shape comes from a "penna" or quill, which once impressed the Genoese pasta maker Giovanni Battista. Our delicious Penne have the characteristic of absorbing every sauce both inside and on their ridged sides.

Information on production:

Using sun-ripened durum wheat or emmer, various types of grain are used in Italy for Byodo Pasta. First, the grain is gently milled into fine semolina. The semolina is then mixed with clear water and extruded through a special press mold (die). In doing so, we consistently adhere to the traditional Italian manufacturing method. For Byodo's organic premium pastas, bronze dies are used wherever possible. These create a rougher surface compared to conventional shaping, which allows the delicious sauce to adhere particularly well later. All these elements ensure outstanding cooking properties and the perfect al dente bite of Byodo's unique noodle delights.
