Information on production:
The organic mustard seeds first undergo meticulous selection and cleaning. Subsequently, the whole seeds go through a gentle rolling process that transforms them into soft grist. The so-called mash is created by gently adding water, vinegar, salt, and selected spices. To optimally develop the full mustard aroma, the mash is allowed a resting period. Only for sweet mustard is the mash then heated to caramelize the sugar and give the fine organic mustard its sweet nuance. After this step, it is ground to a creamy consistency and bottled. For all other mustard varieties, no heat is applied during the entire production process.
