Recipes:
Pancakes
100 g flour mix, 2 tbsp oil (or melted butter), 2 eggs, 250 ml milk (or soy drink), 1 pinch of salt.
Mix all ingredients into a smooth batter and bake into pancakes. Makes 3–4 pancakes.
American Pancakes
200 g flour mix, 1 tsp baking powder, 1 egg, 1 tbsp sugar, 350 ml milk (or soy drink).
Mix all ingredients into a smooth batter. Use a ladle to place 3–4 dollops of batter into a pan, and bake over medium heat into small, thick pancakes. Flip the pancakes only when the top is covered with bubbles. Serve with maple syrup. Makes 12–15 pancakes.
Quark-Oil Dough for one baking sheet of fruit cake
400 g flour mix, 3 level tsp baking powder, 120 g sugar, 1 pinch of Bourbon vanilla, 200 g quark, 6 tbsp neutral oil, 1 egg, 6 tbsp milk.
Knead ingredients by hand to form a firm dough. Spread with damp hands onto a greased baking sheet and top as desired.
Bake at 180 °C for approx. 40–50 min, depending on the topping. For a savory vegetable cake base, use 1 tsp salt instead of sugar and vanilla and add savory toppings.
Potato Dumplings
1 kg cooked potatoes (floury), 150 g flour mix, 50 g butter, 3 egg yolks, salt.
Press or mash the cooked potatoes warm through a sieve. Mix with the remaining ingredients.
Form dumplings from the dough. Bring salted water to a boil, add the dumplings, reduce heat. Do not boil.
Let the dumplings steep for approx. 10 min until they float to the surface. Makes approx. 20 dumplings.
