Byodo obtains all organic oils, including the frying varieties, through a gentle cold-pressing process that preserves nutrients and originates exclusively from the first pressing. The majority of our organic gourmet oils are labeled as "native," indicating that these single-variety oils are only filtered after cold-pressing. This process ensures the freshness and highest quality of the oil. For Byodo organic extra virgin olive oils, only first-class olives are used. After hand-picking, the olives are first cleaned and then gently cold-pressed, with the temperature not exceeding 27 °C. The outstanding quality of Byodo's organic olive oils is guaranteed by the rapid pressing of the olives after harvesting and the precise determination of the harvest time. Each producer makes this decision annually based on their many years of experience.
