Production Information:
The production of Byodo tomato paste begins with sun-ripened Roma tomatoes, which are cooked using the cold break process immediately after harvesting. At gentle temperatures of a maximum of 75 °C, the fruity aroma and red color are preserved. This is followed by a double concentration of the tomato paste, whereby 10% more water is extracted than with simply concentrated paste. This means that for 100 g of tomato paste, approximately 600 g of fresh tomatoes are used, compared to only about 360 g for simply concentrated paste. In this way, Byodo tomato paste is given its particularly intensely fruity taste, significantly enhancing the enjoyment! Subsequently, the fresh tomato paste is mixed with finely pureed organic vegetables (onions and carrots) and seasoned with extra virgin olive oil, sea salt, and herbs.
