The unique Byodo rice cakes are produced in a very special way – similar to homemade popcorn. The organic rice is placed in baking molds and puffed under pressure from two meeting waffle molds. Through this process, the rice grains burst, while the starch emerges and binds all the grains into a uniform round rice cake. This short baking process allows for the release of nutrients and makes the rice cake more digestible. It also gives it its characteristic roasted taste.
