The unique Byodo rice cakes are produced in a very special way - similar to homemade popcorn. The organic rice is placed in baking molds and puffed under pressure from two meeting waffle irons. This process causes the rice grains to burst, while the starch emerges and binds all the grains into a uniform round rice cake. This short baking process allows the release of nutrients and makes the rice cake easier to digest. It also gives it its characteristic toasted flavor.
