Unlike conventionally baked wafers, Byodo's sustainable corn cakes are produced by simple "puffing" – similar to making popcorn at home. The organic corn is filled into round baking molds. The corn kernels burst under the pressure of two converging waffle molds. The starch escapes and "glues" all the kernels together, forming a uniform round disc. The short baking process opens up the nutrients, thus making them easier for humans to digest. In addition, this gives the corn cake its characteristic roasted taste.
