Using 3,000 liters of water, 10,000 kg of freshly ground, organic durum wheat semolina or whole durum wheat semolina are mixed. The mixture is then pressed through appropriate dies depending on the format. To achieve a rough pasta surface and improve sauce absorption after cooking, bronze is used as the ideal material for the dies. Byodo's organic pasta is dried at temperatures between 40 and 50 °C. This slow drying process ensures an even and attractive pasta shape, without cracks or cuts at the edge.
