Ingredients
- 50 grams of blueberries
- 1 egg (size M)
- 2 teaspoons agave syrup
- 50 ml almond milk
- ½ tsp Hensel® Organic Apple Cider Vinegar
- 50 g organic spelled flour
- 1 tsp baking powder
- 1 pinch ground vanilla
- 1 pinch of salt
- butter for frying
preparation
1. Separate the egg whites from the yolks and beat the egg whites until stiff. Set it aside.
2. Mix the yolks with the agave syrup. Add the milk and apple cider vinegar and mix everything together.
3. Mix the spelled flour, baking powder, baking soda, ground vanilla and salt and stir the mixture into the egg yolk mixture.
4. Add the blueberries and fold in the egg whites.
5. Heat a pan with some butter and fry the pancakes on both sides until golden brown. Use about 2 tablespoons of the batter for each pancake.
6. Serve the pancakes warm with maple syrup or fresh fruit.

Replace the spelled flour with one of our gluten-free flours for a gluten-free alternative.
