After harvesting, the sugar cane is defoliated, crushed, squeezed several times between simple rollers, and then pressed. The fibrous parts are filtered off. After cleaning, the sugar cane juice is merely thickened at low temperatures and slight negative pressure. The highly concentrated thick juice is mixed with a few crystals of unrefined sugar, causing the sugar to crystallize. Once the sugar crystals reach a certain size, they are centrifuged off from the remaining thick juice, dried, sieved, and packaged. The molasses content is therefore lower than in Sucanat whole cane sugar. The smaller crystals and lighter color compared to Demerara are due to longer processing. In Naturata gelling sugar, cane sugar is mixed with pure apple pectin.
